Apple Cider Jello for Fall. The perfect gummy jello snack for fall time with apple cider and cinnamon. An easy way to get healthy protein!

It’s easy and fast to make.
Has simple and healthy ingredients. A very easy way to get a little more protein in the kids diets with gelatin.
You also have the security of knowing that there are such a small amount of ingredients in your homemade version instead of an average of 9 (not even all of them pronounceable) in store-bought Jello. Including dyes and all sorts of things that won’t be helping out your kid’s health. If anything it’ll make it harder for them to concentrate and focus on anything. Lets fuel our kid’s brains with real whole foods and high protein gut-healing gelatin.
Plus the kids love it.
They’d eat a whole pan a day if I let them.
It’s also a good way to use up leftover juice from canned fruit.
But this time I’m using the apple cider I canned last fall from my grandparents orchard.
It made a delicious fall themed wassail-tasting apple cider jello.
Apple Cider Jello for Fall
- 8 cups apple cider
- 4 cups water
- 10 tbsp 100% beef gelatin (code WILSONHOMESTEAD saves ya)
- 1 tbsp cinnamon
I pour about half the apple cider and half the water in a large baking dish.
The water isn’t super necessary, but it helps stretch the apple cider a little further. You can exclude this if you like it stronger. Or even add more if you’re trying to stretch it further. Just add more gelatin if you add more water.
Then measure out your gelatin into the baking dish on top of the cider, and whisk it up so it can bloom.
I think recipes generally call for 1 tbsp of gelatin per 2 cups of liquid. But I like to use more gelatin than that. It brings up the protein and gut-healing value of the jello.
It is important to do this step with cool or cold juice so that it can properly “bloom”. This process thickens and plumps the gelatin granules, and then they will be dissolved later in hot juice to turn it into jello. If you don’t do both, it won’t set- up properly. So just remember, bloom in cool juice first, and then dissolve in hot juice next.
Pour the rest of the cider and water in a pot on the stove and get it nice and hot.
I also measure the cinnamon into the baking dish and whisk that in.
Then once your cider on the stove is hot, slowly pour it into the baking dish as you whisk it in. Carefully so you don’t splash it and burn yourself.
Carefully place the whole dish in the refrigerator, without spilling it. Which is surprisingly hard to do. Leave it in until it is cooled and set-up into jello. It usually takes 2 to 3 hours to set-up fully. You can leave it overnight too.
Then you can take it out, cut it up, and enjoy!
What Is The Difference Between Collagen and Gelatin?
Very little! Think of it like apples vs apple sauce – same core ingredient, just a different preparation. Collagen is the protein found in bones and connective tissues. When you cook collagen, you end up with gelatin. When you make bone broth, you are cooking the bones, releasing the collagen and in effect making your own gelatin.
Gelatin is made up of collagen protein, just in a slightly different form. When you look at the amino acid profile of collagen and gelatin, you will see they are basically identical, since they both contain collagen protein. The biggest difference between collagen and gelatin is that gelatin will gel or thicken when cooled.

If you follow a Paleo or the Weston A. Price diet you are very familiar with the health benefits of bone broth. Bone Broth is nutrient dense because of the gelatin that is produced when you cook the bones. Gelatin is just cooked collagen.
