Delicious Cow Tongue Soup Recipe! The perfect way to eat one of those super nutrient dense cuts that aren’t super common these days!

This recipe is one of the easiest ones to start with if you are just learning about ancestral eating and preparation of food.

You literally throw everything in a pot, cook it in the oven for several hours, and you get the most fabulous soup out of it!

It may seem very odd at first. But I promise it’s much easier to get used to (and learn to love!) than liver is!

Tongue is super mild and delicious. It has a slightly squishy texture compared to other meats.

Benefits of eating cow tongue

This meat is considered especially beneficial for those recovering from illness or for pregnant women.

Tongue meat is rich in calories and fatty acids, as well as zinc, iron, choline, and vitamin B12.

Iron and zinc are both vital to your health. Zinc boosts your immune system so that your body is able to fight off infection, while iron prevents anemia, which causes fatigue. Iron also helps your cells produce energy, while zinc supports wound healing. Zinc is also especially important for men in producing testosterone.

Both choline and B-12 play an important role in nervous system health. Vitamin B-12 helps you make myelin that insulates your nerves, while choline makes up a component of chemicals needed for nerve communication. You also need choline for liver function, cognitive function, memory, muscle function, and heart health. That’s why we also eat a lot of eggs because they are another wonderful source of choline.

It also provides a complete protein. Each 3-ounce serving contains 16.4 grams of protein and, like other animal-based protein, it provides all the essential amino acids. This means that the protein in cow tongue provides all the building blocks your cells need to assemble new proteins in your tissue. This is why eating animal-based diets is so important, vegetables don’t give *complete* proteins.

Cow tongue also contains saturated fats and cholesterol, which those of us who strive to eat ancestrally know those are not to be feared but actually are sacred and vital to our health.

Delicious Cow Tongue Soup Recipe

Ingredients:

  • Cow tongue
  • 10 carrots or 1 cabbage (you can change those up for some variety)
  • 5 potatoes
  • 3 onions
  • Salt to taste (I use this Icelandic salt, code WILSONHOMESTEAD to save)
  • 2 tsp black pepper
  • Filtered water

Preheat your oven to 300 while you work on prepping the soup.

You’re going to take the whole tongue and place it at the bottom of a big cast iron dutch oven. You’ll want to use something oven safe since we are baking it.

Chop up all your vegetables. This time I used a whole cabbage since we still had one left from our garden harvest. But sometimes I use carrots instead to change it up. I also always use about 5 potatoes (depending on the size) and 3 onions.

Dump all your chopped veggies into the pot with the tongue.

Now you can sprinkle a bunch of salt on top and about 2 tsp of black pepper. You can always add more salt and pepper to taste when its done, but I like to cook it with some.

Take your pot over and fill it up with water. You want it to cover the tongue and most of the veggies. I prefer to use filtered even for cooking since boiling doesn’t remove certain toxins, only bacteria.

Place in the preheated oven and set the timer for 6 hours. This cooks low and slow to get it nice and tender.

After the timer goes off, take the dutch oven out. Use tongs to take the tongue out and place it on a cutting board to cool.

Once its cooled enough to touch, start peeling the thick tough skin off the outside. I give the skin to the chickens usually. Then chop up the rest of the tongue and scoop it back into the pot.

Stir it all up and make sure it doesn’t need anymore salt and pepper.

And you’re done! Now you have an absolutely delicious, nutrient dense, ancestral soup to feed your family! Enjoy!!

Ingredients

  • Whole cow tongue

  • Whole cabbage or 10 carrots

  • 5 potatoes

  • 3 onions

  • salt to taste

  • 2 tsp pepper

  • Filtered water

Directions

  • Preheat oven to 300
  • Place the cow tongue in a cast iron dutch oven
  • Chop up all the veggies and put in the dutch oven
  • Fill the rest of the way up with water
  • Place full dutch oven into the preheated oven and set the timer for 6 hours
  • After it has finished cooking, remove from oven, take the tongue out and let it cool a little on a cutting board so you can handle it
  • Once its cool enough to touch, peel the rough skin off the outside and throw to the chickens
  • Chop up the rest of the tongue and put back in the pot.
  • Stir it up and its ready to eat!
