Easy + Healthy Banana Blueberry Breakfast Bake Recipe

This has become a breakfast staple in our home! It is very simple and easy to make! Plus, it is a healthy breakfast (or snack) option for the entire family and is absolutely delicious! We all absolutely love this easy and healthy banana blueberry breakfast bake!

Easy and healthy breakfast ideas blueberry banana breakfast bake

Plus, I love that this is an easy way to use up bananas that are over-ripe! You can even use them if they have been previously frozen. Whenever we have bananas that are starting to get too brown, but I don’t want to deal with them right away, I just take them out of the skins and pop em in the freezer until I want to make something like this!

I sometimes find it hard to come up with different breakfast ideas that are healthy without making eggs or oatmeal for every meal.

That just gets old.

So I love having a few recipes like this in my breakfast idea folder on pinterest so when I’m feeling uninspired I have some quick ideas!

So lets just get right into this recipe!

Banana Blueberry Oatmeal Bake

Ingredients:

  • 2 1/4 cups oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup mashed bananas
  • 3/4 cup milk
  • 1/4 cup honey
  • one large egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • 2 1/2 tbsp grass-fed butter

Instructions:

Step one: Preheat oven to 350F, and grease a cast iron pan or an 8-inch baking dish, and set aside. I love using cast iron for everything I can so I usually use my 10 inch pan. Cast iron always seems to make things even tastier!

I usually grease the pans with either some good ol grass fed butter or coconut oil.

Step two: In a large bowl, mix together the mashed banana, milk, honey, egg and vanilla extract until fully combined.

Step three: Then to that bowl add the oats, baking powder, cinnamon and salt, and mix until everything is well incorporated. Technically you’re supposed to mix these dry ingredients in a separate bowl before adding them to the wet ingredients, but I never do and it always turns out good 😉

I love me my one-bowl meals!

Step four: Gently fold in the blueberries, and pour into the prepared baking dish, and smooth out into an even layer. Then take your butter and cut into about 5 chunks then evenly distribute them over the oatmeal mixture.

Ya never can have too much butter in my opinion!

Step five: Bake at 350 for 30 to 40 minutes.

Step six: Remove from the oven and allow to cool for about 15 minutes. Scoop out and serve warm, or cover the dish and refrigerate until you are ready to eat it.

That’s just another reason I love this recipe, because it’s great for making the day before! I like to plan ahead whenever I can because I’m definitely not a morning person. Plus, this always seems to be just as good heated up the next day!

Blueberry Banana Oatmeal Bake

Ingredients
  

  • 2 1/4 cups oats

  • 1 cup mashed bananas about 2 large or 3 medium bananas
  • 3/4 cup milk
  • 1/4 cup honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup blueberries either fresh or frozen
  • 2 1/2 tbsp grass-fed butter

Instructions
 

  • Preheat oven to 350F, and grease a cast iron pan or an 8-inch baking dish, and set aside.
