It’s taken me years y’all.
Years of experimenting. Learning. Failing. And trying again.
Learning to like eating liver.
I’ve found a few ways to incorporate it without feeling like I’m going to throw up. And now most of the time I actually really enjoy it!
So I’d say that’s a success!
It’s funny when you bring up organ meats around people. Most of them squirm in their seat and act like you’re suggesting they lick the inside of a public toilet.
It seems like that is pretty specific to our American culture though, doesn’t it? It’s so uncommon to eat organ meats here. Which is heartbreaking because the organ meats, especially liver, are the most nutrient dense part of the animal. Eating organ meats is still an every day occurrence in most other countries, where they utilize the entire animal with no waste.
Why you should be eating liver daily
What is the Liver?
The liver is one of the most vital organs in humans and animals.
Not only is it the largest internal organ, but it’s responsible for a ton of important functions.
Including:
- Storing glucose, vitamins and nutrients correctly
- Filtering and removing toxins and drugs from your blood
- Processing digested food from the gut
The History Of Eating Liver
Beef liver has always been a delicacy. For many primitive tribes, it was the first food they’d go after when killing an animal. It was reserved for those who needed nutrients the most, which were first pregnant women and children.
Primitive tribes (some of whom were discovered by Dr Weston A. Price) were well known for eating liver. West Nile Tribes, Outer Herbides, Comanche, Native Americans.
It was like candy bars are to little kids nowadays. They just couldn’t get enough of it.
Nature is pretty stinkin simple. Our physiological response directs us to what our body requires (as long as we haven’t screwed with it by getting ourselves addicted to processed sugars). And we require the nutrients in beef. This is what made it taste so good or why people craved it.
Even Orcas know the importance of it and kill sharks only to eat the liver.
I know it’s hard to believe given nobody eats beef liver today.
Why is liver so good for you?
Vitamin D
Vitamin D deficiency is extremely common unfortunately. You can thank the fact that people aren’t outside enough, slather on too much sunscreen and don’t eat liver.
Most people don’t get anywhere near the recommended daily amount which can lead to fatigue, depression, back and bone pain, impaired wound healing, and hair loss.
This vitamin plays a huge role in maintaining healthy bones, reducing the risk of flu and diabetes, optimizing hormones, cell regeneration and even helps prevent cancer and heal leaky gut.
Even though beef liver only contains around 5% of the RDI of vitamin D, every little bit counts when you’re deficient.
So just make sure to get sunlight every single day, even in the winter, and eat your liver!
Well not your exact liver. Find a cows liver. Or a chickens. That would be bad if you ate your own.
Vitamin A
This vitamin is one of the most important nutrients on the earth.
Beef liver is one of the only food sources that contain ample amounts of vitamin A. Just 100g of it has 2200% of the recommended daily intake.
You can’t find any vegetable that is this healthy! It’s in the form of Retinol which is much more bioavailable than beta-carotene, which is found in plant foods.
Some functions of vitamin A:
- Essential for preserving your eyesight
- lowers risk of certain cancers
- supports a healthy immune system
- reduces acne
- promotes healthy reproductive function
Think of pretty much anything important your body does and you need vitamin A for that.
Vitamin B
Many people have a vitamin B deficiency these days also. We are pretty much deficient in anything important.
Especially people who don’t consume plenty of animal foods. This is for you vegans…you just can’t function at your full potential on plants and grains.
It’s vital for neurological function, DNA production and repair, red blood cell development, amino acid metabolism, cell growth, helps convert food into energy, and also acts as an antioxidant.
Beef liver contains Riboflavin (B2), Folate (B9) and Cobalamin (B12). B9 and B12 are both absolutely critical for brain function.
Choline
Beef liver is the richest source of choline, containing over 300mg which is around 85% of the RDI.
This is super important for brain development and function, liver function, DNA synthesis, a healthy nervous system, fat metabolism, cell structure, and cell messaging.
Copper
Most people are deficient in this too. We are usually too high in iron and too low in copper, and you need both.
Copper activates a number of enzymes which go on to regulate energy production, brain function, and iron metabolism.
100g of beef liver contains over 466% of the RDA for copper.
Iron
Beef liver is one of the best sources of iron in the world.
Helps cells generate energy, plays a crucial role in oxygen circulation throughout your body, and helps your immune system destroy harmful pathogens like bacteria and viruses.
And thankfully liver had copper too to help assimilate the iron properly.
Vitamin K2
Beef liver is packed with vitamin K2. 100g of beef liver has 127% of the RDA for k2.
This vitamin is supper important for wound healing, bone health, and prevents blood clotting. It also helps to decalcify the bloodstream.
Protein
Beef liver is a great source of healthy, easily-digestible protein, containing 20g with each 100g serving.
Liver is full of amino acids and mTOR stimulation. It’s one of the best foods you can eat for those two things, which are imperative for building muscle.
Amino acids are essential building blocks for muscles. They stimulate mTOR, the cellular’s master controller for protein synthesis and growth.
Protein plays an important role in just about every biological process. It’s responsible for building, strengthening, and repairing tissue.
Your body needs this to make enzymes, hormones, boost your metabolism and acts as the building block for bones, muscles, blood, skin, and cartilage.
Some ways to incorporate liver
- Liver pâté
- Liver and onions
- Grind or chop it up and add it to soups
- Grind it and add it to hamburger
- Swallow raw chunks with water
- Take it as a capsule (ancestral supplements has a good one)

I think I’ve effectively proven how important it is to get this nutritious organ meat into your diet, and why your should be eating liver daily. Even if you have to take it as a capsule. It is going to improve your function, energy, and so many health issues.
